Olivier is the most popular dish on the festive table. It is customary for us to prepare this salad literally with basins and continue to eat it for several days after the New Year's Eve. But how will this affect your health?

The composition of Olivier was constantly changing. If the original salad recipe included quail eggs, potatoes, cancer necks and gherkins, the modern version implies the addition of sausage or chicken, carrots and peas.

The main harmful ingredient in the modern recipe is sausage, which is industrially processed meat and contains soy protein, a huge amount of E-additives, flavorings, dyes.

This salad is also made "dangerous" by the amount of mayonnaise that is added to it. With caution, the dish should be eaten for diseases of the digestive tract and inflammatory diseases of a chronic course.

To make the salad more useful, you can replace the sausage in its composition with boiled turkey or chicken, canned peas – with thawed, and mayonnaise — with classic yogurt, or prepare mayonnaise according to a homemade recipe, adding olive or vegetable oil, eggs, pepper and dried garlic.

In general, if you eat a tablespoon of fresh New Year's salad every day without canned peas, mayonnaise, pickled cucumbers and sausage – nothing will happen. But this is if we are talking about the right composition of the dish.

If we talk about the widespread New Year's olivier, then it will not do without consequences. Ingredients with different storage resistance are mixed in the salad, which means that pathogenic microorganisms begin to multiply much faster in it.

As soon as you add salt, mayonnaise and pickles to the salad, the active separation of moisture begins, which is an excellent environment for the reproduction of bacteria.

That is why it is not the best idea to finish the salad left after the holiday, especially if it has been standing on the table all night. The remains of the olivier are best stored in the refrigerator, adding salt, mayonnaise and pickles just before serving.
