Traditionally, the Christmas table should be rich in fish and meat dishes (preferably a whole carcass of goose, duck, turkey, chicken) and a pie as a symbol of unity. What interesting things can be cooked? We offer several options for healthy dishes.

 

Uzvar

Ingredients:

  • dry apples;
  • rosehip;
  • cranberry;
  • dried apricots.

Preparation: wash the dried fruits well, pour water and bring to a boil, let it brew, then strain the drink.

You can simply cook berry juice from cranberries, cranberries, sea buckthorn. If you want, you can sweeten it to taste.

Canapes with goat cheese, cucumber and red fish

Ingredients:

  • goat cheese – 200 g;
  • red fish (fillet) – 150 g;
  • cucumbers – 1-2 pcs.;
  • greens for decoration.

Preparation: cut the cheese, fish into cubes, cucumbers into washers. Collect everything in a pyramid, fix it with a sprig of rosemary or a skewer, decorate with greenery.

Chicken fillet salad

Ingredients:

  • chicken fillet – 400 g;
  • orange – 1 pc.;
  • green apple – 1 pc.;
  • a bunch of green salad.

For the sauce:

  • olive oil — 3 tbsp. l.;
  • salt — 1 tsp.;
  • honey — 1 tbsp. l.;
  • ground black pepper.

Preparation: boil chicken fillet in salted water until tender, cool. Cut into cubes. Peel and peel the orange and slice it.

Peel the apple and seeds, cut into cubes, pick or slice the salad. Prepare the sauce — mix olive oil with honey and salt, dissolve well. Fold everything and season with sauce.

Turkey, baked whole

Ingredients:

  • turkey — 1 carcass;
  • lemon — 2 pcs.;
  • onion — 2 pcs.;
  • parsley — 5 sprigs (part for the sauce and part for the substrate);
  • rosemary sprig — 3-4 pcs.;
  • ghee oil — 150 g;
  • salt, pepper to taste;
  • olive oil — 2 tbsp. l.;
  • garlic — 2-3 cloves;
  • apple — 2 pcs.;
  • orange — 1 pc.

Preparation: wash the turkey well and dry it, make a mixture for rubbing the turkey separately in a bowl. Chop the parsley, rosemary and add ghee oil, mix.

Add chopped garlic, salt, pepper. Grate the zest of one lemon and squeeze the juice out of it into the mixture, add olive oil, mix everything well.

Remove all the insides from the turkey and gently separate the skin from the carcass (do not remove, but lift). Distribute part of the spicy mixture under the skin, and rub the whole carcass on top of the skin with part of the mixture.

Coarsely chop apples, lemon, peeled onion. Leave a couple of slices of onions and apples on the pillow. Stuff the carcass with apples and onions.

At the bottom of the baking dish, put slices of apples, onions and put sprigs of parsley and rosemary on top. Place the turkey on top. Fasten the legs with a rope, and fix the hole with skewers.

Bake the bird at 180 degrees for at least an hour and a half. After baking, pour the turkey with the released juice from the baking sheet, cover with foil and leave in the oven for another two hours. Serve turkey with vegetables.

Apple pie

For the test:

  • almond flour — 300 g;
  • honey (liquid) — 2 tbsp. l.;
  • ghee oil — 50 g;
  • almond petals for decoration.

For the filling:

  • green apples — 6 medium;
  • walnuts — 150 g;
  • raisins — 50 g;
  • liquid honey — 1 tbsp. l.;
  • cinnamon to taste.

Preparation: grate peeled apples, squeeze out excess juice, chop walnuts, mix with apples, raisins and honey. Add the cinnamon and mix, combine the ingredients for the dough and grind them into crumbs with your hands.

Cover the split form (24 cm in diameter) with parchment. Lay out the dough and apple filling in layers. The top layer should be the dough. Tamp the top layer well and bake the pie for about 45 minutes, at 180 degrees.

Lightly brown the almond petals in a dry frying pan. When the cake is ready, decorate it with almond petals.
